I used to use a crock pot when I had kids at home. Here is a recipe from WOAI in San Antonio, for crockpot lasagna.
* 1 pound extra lean ground beef (can use ½ beef, ½ Italian sausage)
* 1 medium onion, chopped (1/2 cup)
* Fresh garlic chopped
* 2 cans (15-ounces each) Italian-style tomato sauce
* 1 tablespoon dried Italian seasoning
* Salt and pepper to taste
* 2-1/2 cups shredded part-skim mozzarella cheese (12 ounces)
* 1 container (15 ounces) low fat ricotta cheese
* ½ cup grated Parmesan cheese
* 9-12 uncooked lasagna noodles
Cook ground beef, onion, and garlic in skillet over medium heat until beef no longer pink. Stir in tomato sauce, Italian season, salt and pepper.
Mix 2 cups of mozzarella cheese, ricotta, and Parmesan in a medium bowl.
Spoon ¼ of beef mixture into bottom of slow cooker; top with 3-4 noodles, broken into pieces to fit. Top with ½ of cheese mixture, ¼ beef mixture, top with 3-4 noodles, remaining cheese mixture, ¼ beef mixture, 3-4 more noodles, and remaining beef.
Cover and cook on low heat for 4-5 hours or until noodles are tender. Sprinkle top with remaining mozzarella cheese. Cover and let stand for 10 minutes or until cheese is melted.
