and although the Orthodox church and many catholics in eastern europe abstained from dairy and eggs ("The black fast") during Lent, those in most of Europe were allowed to use dairy eggs and various forms of fish.
as for us, we eat locally so don't have access to a lot of the ingredients on the NYTimes healthy recipes pages, but if you have a nearby grocery, check them out.
