It's fiesta time, so lots of visitors but no party this year.
I've gotten away from posting food/recipes since I retired, mainly because I no longer cook. At our house, there are five family, 3 staff and often six to ten workers or guests at our main meals every day, so we have a full time cook.
Today, our cook has everyone cutting up veggies to make KareKare:

although we usually use tripe and pork, not ox tail, and we use slightly different veggies (depending on season).
this recipe uses beef. Here,we rarely eat beef: the beef is either very expensive (the best is imported from Australia) or is local, and often the cheaper beef is waterbuffalo beef, which tends to be tough.

the problem with a lot of the food blogs is that, unless Chano travels to Manila and buys at the gourmet stores, we just can't find the ingredients at the local Palenke.
But I enjoy reading about the recipes anyway.

no, no rabbits here, but when we were in Africa, we introduced rabbit raising (in cages) to supplement protein in our nutrition village.
